Yum good for wraps or just stuff it in your mouth
1/2 tbsp oil
1 chicken breast chopped
1/2 onion diced
1/2 red pepper thinly sliced
1 garlic clove crushed
38g chorizo sliced
1/2 tbsp cajun seasoning
125g long grain rice
200g can plum tomato
175ml chicken stock
Step1: Heat the oil in a large frying pan with a lid and brown the chopped chicken breast for 5-8 mins until golden.
Step2:Remove and set aside. Tip in the diced onion and cook for 3-4 mins until soft.
Step3:Add the thinly sliced red pepper, crushed garlic cloves, sliced chorizo and cajun seasoning, and cook for 5 mins more.
Step4:Stir the chicken back in with the long grain rice, add the can of tomatoes and le chicken stock. cover and simmer for 20-25 mins until the rice is tender.
